Dive into the world of wild venison in the heart of an ancient Sussex woodland. This fully-immersive course is a deep-dive into deer skinning, butchery, and meat preparation. For lunch, you’ll feast on venison cooked over fire, and depart with venison delights to enjoy at home.

If you’re curious about procuring wild meat, want to connect with where your food comes from, or simply want to spend time in the woods with like-minded folk, then this course is for you!

What to Expect

  • Hands-On Learning: With expert guidance from our team, you’ll spend the morning learning skinning and butchery techniques and breaking down a fallow deer into primal cuts. With a maximum of five guests per carcass, you’ll be actively engaged in the whole butchery process.

  • Gain Knowledge: The Wild Order is on a mission to make hunting and procuring wild food more accessible. The Deer Day is an opportunity to gain knowledge about the entire process, from hunting and butchery to cooking and nose-to-tail eating.

  • Feasting in the Woods: Henry our chef will prepare a delicious venison feast, cooked over fire to showcase this incredible wild meat. The day includes lunch, a selection of the finest local beers and beverages, and an afternoon re-fuel before you hit the road.

  • Lots to Take Home: In the afternoon you’ll transform your primal cuts into various delectable treats, from roasting cuts to sausages and mince, leaving with a Wild Order tote bag filled with venison to savour at home.

This deer butchery course is for anyone and everyone. From curious first-timers to budding chefs, we’re here to connect you to ethical wild meat and teach you honest skills. All whilst enjoying a day out in the woods.

Logistics

Each Deer Day runs from 10am to 6pm at The Wild Order HQ, within an ancient woodland in Etchingham, East Sussex.

There’s onsite parking, or Etchingham Station is on direct train routes from London, with a scenic 15-minute walk from the station.
