Join us in our beautiful patch of ancient woodland in East Sussex for a day of deer butchery and wild food. We’ll be based in our Scandinavian inspired timber framed HQ for a memorable day in the woods. This deer butchery day course centres around our fallow deer, which although introduced to the UK in the 11th century are now considered naturalised.
Once settled into our woodland surroundings you’ll have careful tuition from The Wild Order team and get hands on while learning how to properly skin a deer. From here you’ll be getting stuck in to butchery, learning how to respectfully butcher a deer in to its primal cuts.
We will then break for lunch and enjoy a fire cooked feast with local beer and wine.
After lunch and a little woodland stroll you’ll get busy turning the primal cuts into all sorts of delicious treats to take home. From rolled roasting cuts, to sausages, mince and lots more, you’ll prepare these ready to take home with you in one of our Wild Order hemp tote bags.
On this specialist venison butchery workshop we will be working with one carcass per 5 guests, so you will get hands on and have the opportunity to take lots of delicious venison home with you.
The Deer Day is a one-day butchery course designed to deliver experienced-based learning while enjoying beautiful food in a stunning East Sussex woodland which is easily accessible by train (1hr 15 from London) or by car, with parking on site.

The Wild Order will provide a large bell tent with mattress and bedding, along with a BBQ and hamper of food + drink for a night in the woods after the course.
